The award-winning Sands Restaurant with its blessed sought-after views hosted the LOUIS XIII de Remy Martin Gala Dinner on Tuesday evening, 19 December 2017. The event started with a cocktail reception on the Sands Deck during sunset, followed by an outstanding six-course set menu thoughtfully curated by The ANVAYA’s Executive Sous Chef Lucky Salim.
The house of Remy Martin was founded in 1724 with its signature blend of Grande and Petit Champagne Crus forming Cognac Fine Champagne. First created in 1874, LOUIS XIII Cognac is an exquisite blend of up to 1,200 grapes eaux-de-vie sourced 100% from Grande Champagne, the first cru of the Cognac region. Each eau-de-vie is matured slowly inside an oak cask. Each individually numbered decanter is designed after an original 16th century metal flask discovered on the site of the battle of Jarnac in France and is made from fine crystal, mouth-blown by some of the most skilled master craftsmen for generations.
After cocktails on the deck, the dinner opened with poached Balinese oyster, with the feast continuing with confit of duck & apple bouillon and pan-fried barramundi. Roasted Black Angus beef tenderloin served with braised short rib mousseline potato, erengi mushroom glazed baby carrot and red wine reduction was lined up as the main course. For a fittingly elegant ending, marinated strawberries served with vanilla bean ice cream and vanilla cream cleansed the palate. The truly decadent culinary experience was paired with the best Remy Martin products to cheer the evening.
